Hello, I am Jacques Torres from Jacques Torres Chocolates. And
today I'm going to show you how to do one
of my favorite piece of chocolates. A little something to
munch on. What I did here I put a glass
bowl with some chocolates in it but I don't melt
the chocolate completely. I have some little pieces, some what
I call [UNKNOWN]. Now, I put the glass bowl here
and I transfer all the chocolate into the second cold
bowl. So with my immersion blender I'm going to be
sure that all those little pieces are melted. On the
side of the bowl the chocolate starts crystallizing. That means
the chocolate is ready, and it's exactly 90 degrees. The
last steps is to just put whatever candy or nuts
that you want to put in. So you just mix
everything very well. Put everything into the tray. You just
spread the product All the way to the corner. If
it's not thick enough, it's not as pleasant. You don't
have as much crunch. We tap [SOUND] and it's done.
The bark is done. I'm going to put it in
a fridge for about ten minutes, and then we need
to be able to break it. To unmold it, it's
actually pretty simple. Just press on both side, reverse it.
Okay. You remove the parchment paper. On the side of
the table, break it in pieces like that. Viola.
