[MUSIC] For the marinade, we have peaches. Just crush them up. They only need to be chopped up or cut up. We're gonna add our capers. We're gonna pour it right ont op of the [INAUDIBLE]. A little bit of flour, a little bit of Parmigiano Reggiano. You wanna come up and taste it? All right come on up. [APPLAUSE] [MUSIC] Welcome to the Food and Wine Classic in picturesque Aspen, Colorado. I'm Jackie Tranchida here celebrating 30 years of this exciting culinary event for three delicious days. [MUSIC] How I judge the right color for the rue for the perfect gumbo is two beers. That's generally the time that it takes So having the perfect root, and on Sundays sometimes when I really wanna spoil myself I purposely burn the root so I can have another two beers and start again. [LAUGH] [MUSIC] We loved this event so much, we loved all of them and we loved the people, and this year we have more of the great stuff. Everybody's really upped the anti and that's why it's so incredible now. This welcome reception really just kicks off the whole weekend here in Aspen. Celebrity chefs are all over the place, serious foodies, so it's a big deal. Everyone gonna be at this party. Hey everybody welcome back The Chew. [UNKNOWN] and I recently attended the ultimate outdoor feast, the ASpen Wood and Wine Festival. I love ASpen, I think I'm having a blast. You having a blast? Always.
