My first big break was working for Chef Frank Taylor, and at the time we were at Jubilee Restaurant in Pensacola Beach, and there were actually two restaurants. The upstairs was the fine dining place that everybody wanted to be at. And my only way that I could come up with for a shot to get up there was to challenge Chef Taylor to a Fish cleaning contest and I bet them that I could clean the tuna as good as he could. He came in the door. And if I did I ask them to let me have the job upstairs. And so we clean these two tuna and I did a good job
