I was cooking in Colorado and I really wanted to come back to Austin and be a part of the whole local food movement that was going on. So what popped in my head was to start doing a food trailer, which is so popular in Austin. I looked around and tried to find this old trailer that I could fix up and do what I wanted with it. We put a wood grill on there that we cook everything on And the whole concept was, you know, farm to trailer. I really support local farms. I wanted to develop relationships with the farms and the whole goal was to get a restaurant some day and, you know, eight months later I signed a lease for Barely Swine, and here I am.
