I think you first have got to start with a cornbread dressing. And that means making cornbread the day before and using really good cornmeal, no sugar. And then when you crumble that up I use tons of onions and celery and some herbs, butter, chicken stock and that makes the best dressing. I don't stuff it inside the bird. Just cook it separately.
