The heat is on when the Quickfire Challenge demands that the chef'testants create a sweet treat without using any sugar. And when it comes time for elimination, the chefs must serve to an especially judgmental crowd when Toby Young, food critic and best-selling author, joins the judges table. Will the chef'testants be able to prove their place in the kitchen?

guest judge for this round. Award winning chef and owner
of the chef academy, Jean-Christophe Novelli Hello. Hello. Hello, nice
to meet you. Jean Christophe Novelli is an acclaimed pastry
chef. Immediately I'm thinking desert challenge. So chefs, your diet
Doctor Pepper prepared a challenge is to create the ultimate
sweet treat. But there is a catch What you see
before you is all the sugar in our Top Chef
pantry. John, Chris, Steph and I will be walking out
with it. Oh. You'll have 45 minutes to create a
sweet treat using any non-sugar ingredient. Immediately I think of,
Because I'm not strong at all in pastries or desserts.

are focused on their physique. I'd say over half my
desserts are sugar-free. I'm going to do a little spring
roll. Stuff it with some nuts, soak it with honey
and make it a fat free frozen yogurt. I'm excited.
I can really [INAUDIBLE] today. [NOISE] You guys, pop them
inside the 375. Please don't change it. Not only am
I not good at deserts, but I'm not good at
creating deserts without Sugar, cuz I've never had it before,
but I find some [UNKNOWN] dough, some ricotta [UNKNOWN] and
then some agave syrup, to give it some sweetness. So
I'm gonna do a layered blend of the cheese mixture,
the [UNKNOWN] dough, and the strong fruit. [NOISE]
