[MUSIC] Confident with this one? Ten or 11 years ago, I did some culinary competitions and I always did well, so. I chose salmon because it takes a little more finesse to perfectly cook 12 portions and serve it. So it's a little bit more of a challenge to go with that, I think. [MUSIC] You son of a ****. When I'm cooking Atlantic Salmon unilaterally so it's going to cook very slowly from the bottom up. It's pretty risky because the top can still be cold and raw instead of, you know, warm and rare. Hey look. deaf and dumb. Cooking for Thomas Keller is. It's nerve racking. I mean, he is just a genius. And this is a huge, huge, huge opportunity for him to see my talents. And that it's probably one of the edgiest ones for me to try and do something that I never do. I hope that I can take the appropriate technique for the end result that I'm looking for. [MUSIC] Hey chefs. I know the pressure's on. I'm gonna add a little bit more pressure right now. The winner of the challenge will also receive [MUSIC] [BLANK_AUDIO] [MUSIC]
