This is really fun for me. My husband Rick is our sommelier at the restaurant, so we're pairing food and wine all the time. That gives me a little leg up here. I think I can definitely win this thing. And chefs, this is your final high stakes quick fire. The winner of the quick fire will be going to London. Wow. And staying for six nights at the London Hilton on Park Lane. I would love to win a trip to London. My wife has never been to Europe and I would love to be able to take her there. I think it's really hitting us that this is the last set of challenges and It's kinda anybody's game. They picked the federalist to dry greek zinfandel. It's a lot of deep red fruit and some really beautiful spice notes. I'm going to make a spiced robbed wild boar tenderloin with a blue cheese ganache. Angelo do you have [UNKNOWN]? No I do not. Five of us in this kitchen that really want it. And there's only four tickets. ANd there's a lot of pressure. TIff can I use your peeler? Yeah. I want to do a braised pork belly. And then do an apple and red wine puree underneath. THe biggest difficulty in making this is braising the pork properly. We only have one hour, so I think the pressure cooker will have to do. [MUSIC]
