For a holiday side I like to do a gratin. Basically just different kinds of root vegetables. Whether it be parsnips or rutabagas, turnips anything like that. And I like to add just a lot of dairy that's reduced. Put some cheese on top, put it in the oven and let it cook slow until it gets nice and colored on top and all the root vegetables are nice and tender.
