There's a really classical Italian dish called Pappa, okay? Pappa Pomadoro is a tomato. But we do a peasant Pappa. We make a porridge which is basically the equivalent of polenta made with bread crumbs, chicken stock, and bread crumbs. Then you add a little cheese if you'd like. Most of the time it doesn't even need it. And it's just so simple. You grill beef heart, or grilled chicken livers on peasant papa with a lot of squash, perfect.
