There's three, I think very simple offals to start with. Chicken livers on skewer with figs wrapped in bacon, grill them outside. Chicken heart, marinate them, little bit of balsamic, little bit of garlic. Again, grill them, Yakitori style. In Italian it's called [FOREIGN]. And then with a beef heart, There's no intermuscular fat, it's the leanest cut of meat you can get. High in creatine, super mineral, and it's just like a steak cut. So you clean it off and you grill it, serve it medium rare.
