We bake a lot of chocolate things at the bakery obviously and we use a consistent cocoa powder. It's really dark. Ours is Dutch processed which A gives it a darker color and a little bit of a milder flavor. The only thing you might have to worry about, it also allows your baked goods to add a little bit of rise, so anything you add it too, it's almost like adding a baking powder or baking soda to it.
