[MUSIC] In terms of new ingredients I've discovered and really mad about, there's something called a long bone rib eye. And it's a ribeye steak with a super long bone and it just looks terrific. Butter, I never heard of it before and now I'm using a lot of it. The most exciting thing to me right now is artisanal pork. There's amazing strides being made in great raise management in terms of the actual animal itself but also the way it's treated and the way that it's fed. And it gives us so much more flavor to play with and deal with it, it's the spectacular thing. We certainly have a relationship with the farm in Youngsville. Which is called Jacobson Farm. And he's the only farm in America that is, has certified organic snails. So that's something we have a good time. [MUSIC]
