[BLANK_AUDIO] If someone tells me that they're preparing spicy roast chicken I have to think about wine that's gonna really match that intensity so if they were just poaching the chicken they really haven't done much with the flavors fairly neutral. But if they put a drive of barbeques spices and then throw it on the grill they've turned it to red meat And I'm looking for really robust wines like Australian Shiraz or Californian Zinfandel. Sometimes that really gonna be a very, very aggressive that has a little ripeness to it. That's going to sort of counter that spice and heat and sort of level it out. And then, pick up on those rich flavors that make for a very satisfying experience.
