[BLANK_AUDIO] If I were making a chicken with lemon or more of a high acid or like a lemon caper butter, I want to use wines that have high acid to them like [UNKNOWN]. It's really gonna pick up those citrus notes. It will answer those capers, that really nice herbal, slightly tangy edge. And the Sauvignon blanc will keep the palette fresh, clean it up, and each bit will be really nice and fresh. Another wine that quite often is overlooked is Chenin blanc or vouvray from the Loire Valley. It really navigates dishes like that very nicely, accents the citrus notes as well as any of the other sort of vegetable accompaniments that might be on the plate because you don't only want a Play the one item. You want the whole experience to be complete. And those are some of my favorite pairings.
