The one that I see most often is with the burger. So here's what you do. Make your patty, you season it nicely, you throw it on the grill. What happens? It plumps up like a football. What you do next? You take the back of your spatula and you press down And you get rid of all those delicious juices running through it, and you dry out your burger, and all the work you've done have all gone for naught. Here's a tip. Take your burger. With your thumb, make a well in the middle of the burger. You're kinda cheating the burger. You're kinda faking the burger out. Put it on the grill, and when it cooks it, it will then come back to the shape you want it to you. And it will retain all the juices that you want it to without using the back of your spatula.
