I'm gonna make a dish, it's gonna be skate with a smoked chile butter. It's not the first fish that you think of when you go to the fish monger or actually go to a restaurant. It's a ray. So they call it skate wing. And so, when you see the rays, this is my This is as good as it gets right here in the water. On one side it's like two triangles. One side there's a skate wing and then the middle separates and then there's the other side there's a skate wing. I season it on both sides with salt and pepper. And I'm just gonna dredge it very lightly in something called wonder flour. So this way the flour's already cooked In a way, on top of the skate, so it get's it really nice and crispy. A little bit of canola oil in the pan, put the skate right into the pan here, let that sort of cook through and get nice and crispy. Now, while that's working, we're going to make our chipotle butter. It's a smoked jalapeno, it's a little fiery, a little smokey, a little bit of honey just to kind of quell the heat a little bit, And then some softened butter. Let this go. I'm going to serve a tiny little salad to go with this. Some cherry tomatoes, some fresh basil. And we're just going to do this right into the mixing bowl. Red wine vinegar, some extra virgin olive oil, salt and pepper, thinly sliced red onion. I'm just going to toss this So we have our salad ready. [SOUND] So now we're gonna take this out. You see in recipes, it says reserve the fish, right? Take it out of the pan. And now we're gonna deglaze our pan with a little white wine, [SOUND] some lemon juice. I'm just gonna add the butter now, the chipotle butter, and let this kind of melt. You want the butter to melt nice and slowly so it doesn't separate. We're gonna add our capers. Some tarragon, and we're just going to take this sauce and we're going to pour it right on top of the skate. Take our tomato salad, it's very light and beautiful. So, the skate, smoked chili butter, capers, there you go. You want to come up and taste it? All right, come on up. [APPLAUSE]
