I like it to be room temperature, but the idea is, what I would say to you is, keep it in the refrigerator so that the patties stay intact. Okay make the patties, put them in the refrigerator so that they firm up, so that they don't break apart on the grill, and then take them out five minutes ahead of time and then put them on the grill.
