Probably the best things to practice on are potato, they're inexpensive, you can buy some pretty large ones, so your experimentation is not going to be expensive. You're not gonna waste expensive ingredients, and you always want to start by cutting them flat, so you Hold the potato with your claw grip and then take a slice off of it and then rotate the potato so a flat side is down on the cutting board. Now you've got a really stable vegetable from which you can start to work and then as your skills build, you can go to more difficult vegetables.
