To be really good to your knives just keep them
clean and dry, store them somewhere safe like on a
magnetic bar or in a knife rack in a drawer
or in a block, a universal block or a slotted
block. And then sharpen it on a regular basis. One
of my personal goals is to pop the fear bubble
around People sharpening their knives on a sharpening stone. It's
not hard. We've been doing it for thousands of years.
When it cuts easily it's just a pleasure.
