I think ceramic knives are interesting. They're not my favorite.
They tend to be on the smaller side. They're extremely
sharp when you buy them. But, if that knife chips,
or you have to break the tip off, there's really
no way to restore it. You can resharpen a carbon
steel knife. You can sharpen a stainless steel knife. They're
a little bit too small. They're not quite deep enough
So you don't get good knuckle clearance. And they're extremely
light, so it feels a little bit like a toy
in my hand. So it's very sharp at the beginning
and feels like a toy, that's a lethal combination.
