When I have too much zucchini in my garden, I usually take in and would slice it on a mandolin, toss it in a mixing bowl with a little extra virgin olive oil, salt and pepper and lemon juice, and put it on a sheet tray and throw it in the oven for three to four minutes, pull it out and it's a nice warm zucchini salad. Add a little lemon juice and some toasted pine nuts and it's absolutely fabulous.
