Ben Runkle and Bryan Butler, co-owners of Salt and Time Butcher Shop and Salumeria, asked me to come hang with them at their shop for a day (actually I pretty much invited myself), and I was lucky enough to be there when the Red Wattle hogs arrived whole, ready to be butchered. I immediately threw on a butcher’s coat and marched into the slaughter room, ready for all the action. Salt and Time is a full-service butcher and restaurant that specializes in sourcing whole animals directly from Texas ranchers. This allows Runkle and Butler to offer custom cuts of meat, an option that was previously unavailable in Austin until Salt and Time opened their doors in 2013. Sourcing whole animals also gives them the freedom to experiment with cured meats and charcuterie, resulting in specialty items such as coffee lomo, pecan salame, and Wagyu bressola, among others. In additional to all the meats, Salt and Time also carries artisan pantry items, coffee, beer and wine.
