A beautiful winter salad would be--I love butternut squash. I love the sweetness of it. I would roast it to the point of where it's almost, you know, al dente, like a little firm. I would cool it down, slice it into beautiful cubes, mix that with a bitter green- frisee, escarole- maybe even just lightly wilted just to give it a little-- offset that texture, and then I actually make a maple syrup vinaigrette, and there you have it.
