I didn't have cremini mushrooms which I always do have on hand because I love them so I used regular button mushrooms.  I also added 4 strips of bacon, cooked and crumbled.  I added whipping cream (1/4 cup) instead of the sour cream due to the richness added by the bacon.  Lastly, no chives...just green onion tops.  Loved it...the sharp white cheddar makes this potato fantastic!!!

Wonderfully rich tasting and terrific in the wild mushroom soup.  I didn't have the Madeira or Marsala so I used a dry white table wine.  I also added a half cup of chicken and beef stock and reduced before adding the cream.

Excellent flavour!!  Easy to make!! So rich tasting!!!  I used a mix of dried wild and cremini.  I would add much more preferably.  I omitted the peas, too.

I was very hesitant in making a bone-in ham.  I must say I was very pleased with this dish.  I did make some changes though.  I used white wine and ginger ale in place of the cider, I added at least 4 tbsp of br sugar and reduced the heat to 325.  I didn't make the gravy just served the compote along side the ham.  I didn't like that the apples were so mushy so I would either put them in after 1 1/2 - 2hrs or cut them into larger chunks.
