I'm still dreaming about this soup 3 days later. My sister made it, so I can't speak to the ease or difficulty of prep, but I will make it in the future. It was just too good!

My sister found this recipe for Christmas Eve - I actually did the cooking on this. Easy prep and such a beautiful dish. We used fingerlings that included red and purple . They were a huge hit - so full of flavor. The soup and roast from this article are also divine!
