peapufferThis is okay. I split the recipe as I only cook for two and put it in a 8x8 baking dish. Looked really good coming out of the oven and smelled delicious. Unfortunately, as it cooled it sank and it was a little bland with regards to the spice. The cheeses are just a little too salty.

This had the best flavor! Rich and creamy, mmmm!!! However, I thought that maybe the pancetta could be more finely chopped as it was just kind of salty and sank to the bottom of my sauce. Will try this with some nice bacon next time and see how it turns out!

I just made this and it is great! For all its simplicity, from few ingredients to easy prep, it really was very flavorful and satisfying. I did switch the rice from the recommended long grain white/jasmine to brown rice (mostly because I had it on hand, but also to make it a little more healthy), used a turkey kielbasa, and did not cook the rice with chicken stock. I also did not use low sodium broth (aversion to low sodium products...) and just added water to taste. Added a little garlic as well. Perfect!
