mjmajorsI had the same experience as Cookinginpa. Jellies were very, very sweet and did not hold the sugar. I made mine with blackberries instead of raspberries. Very strong berry flavor, but a bit too sweet. I might try keeping them at room temp, and then rolling them in the sugar. I have not tried the apricot yet.

These make a great appetizer. I make the recipe a day or two ahead so the flavors meld together. They are so pretty set up in the lettuce wraps too.
