Upon completion of this recipe, I was expecting to find a standard salad but was surprised to encounter an amazing and versatile side dish, good enough to eat as a meal. The celery root is perfectly complemented and highlighted by the sweet punch of tarragon and pears and sour zing of dijon mustard and lemon juice. Toasted walnuts and eggs add textural diversity and another level of flavor complexity. Definitely give this a try.
