Mojito Jell-O Shots with White Rum and Fresh Mint

I made these for the superbowl and they were a huge hit.  Adding some green food coloring makes them a little more colorful.  I also recommend bruising the mint leaves with the end of a rolling pin before combining with the lime juice.
