A nice change to eggplant parmesan. However, there was alot of liquid from the crushed tomatoes. I might suggest using a good marinara sauce instead. And be sure to slice the mozzarella very thin, or even grate the cheese.

Quick & easy. Herbs and cayenne pepper add lots of flavor. I also added some lemon juice to brighten the flavors.

I used creme fraiche instead of fromage blanc, and they turned out great.  This is a very easy quick recipe, but is very impressive to your guests.

The flavors in this recipe went very well together. I added a little ground cumin to the tomato and cucumber salad to give it a little kick. I also coated the tuna with seseame seeds before grilling. The tahini sauce was a little bitter, so I stirred in some honey. I would definitly make this again.
