I typically  do nto love Pernod, but this sauce is fantastic. the tarragon and Pernod go well together, the mussels were cooked perfectly. I doubled the recipe to serve a crowd and it was perfect. I highly reccomend. Also if you re trying to entertain on a budget, this is a very inexpensive dish to make as mussels are  very inexpensive (at least in the northeast).

The mixture  of water  and milk is perfect. This is a perfect recipe to alwyas have the ingrediants on hand to make for unexpected guests! It is so easy. If you do not have a  pastry bag, a ziploc bag with the corner cut off works just fine.
