I really enjoyed this stew but living in Texas, I'd like a little more Tex-Mex flavor & spice. Next time, I'll substitute the potatoes with some crisp corn and add mushrooms with the celery & onion. Also, I would replace the Anaheim & hot sauce with 1/2 or so jalepeno for kick. The base was really good and a nice alternative to Chicken Tortilla, which is everywhere here. Thanks!
