So fresh, light and easy to prepare - a great little weeknight meal. This will be great with fresh-from-the-garden tomatoes this summer.

This was delicious!  For the winter veggies, I used a combination of butternut squash, Brussels sprouts, turnnips, and celery.  Be sure to cut your slices on the thick side, or they will become too mushy - I might even try some smaller chunks next time, instead of slices.  The onions added a wonderful depth and sweetness - a very warm, comforting meal.

The picture of the stew in the magazine was what tempted me to make this - it looked like pure comfort food!  We are vegetarians, so we adapted the recipe by substituting Quorn brand "chik'n tenders" in place of the pork.  This stew was delicious!  Just really clean, bright flavors - it has easily earned a place on our  repertoire.  I might even serve it with some rice on those really cold fall evenings...
