This was super easy to make. I made it with strawberries, I left our the vanilla bean (who wants to spend $10 on that) and just added a teaspoon of vanilla extract to the cornstarch slurry. It was a super big hit with my guests, lots of clean bowls.

I have made this cake about 6 times, and it is always a hit. I have made a coconut cake variation, but adding coconut extract to the icing along with sweetened shredded coconut.
