I made this to use up the eggplants our garden recently produced and now I want to host a dinner party just to share the love of this FABULOUS dish. All I can say is YUM! Great flavor, great textures w/ the cheesy goodness, eggplant and crisp topping. Everyone had seconds.

This dish is fabulous!  We found this recipe about 3 months ago and have probably made it 5 times since.  Great flavors- my husband and I make it for "date-night."  Yum!
