"Banger" is NOT slang for sausage. It is a particular type of sausage from Up North, Cumberland I think, and has a very distinctive flavour and does not remotely resemble what has been presented here.

Disappointing.  the breast was not as moist as it should have been.  Skipping brining is a shortcut to avoid.
