Carrot Cupcakes with Caramel and Cream Cheese Frosting

Outstanding recipe. Carrot cake is among the best I've had, homemade caramel is easy, and the cream cheese frosting has JUST the right amt of sweetness. This is a time consuming but ultimately satisfying recipe and well worth the effort.
