These muffins have a nice texture, and a lovely smell. They are not too sweet, so they work well for school lunches when I send soup and need a little starch on the side.

Nice, easy recipe for company since the only thing to be done at the last minute is basting. I used only half the sauce -- it is very sweet for my taste, but used in moderation, it caramelized well and the tang and spice came through.

These are quick and easy and hard to mess up. I often serve them with thin slices of cured country ham and maple butter.

I've experimented a lot with recipes for Thai-style beef salads, and this is the one I'll stick with. The flavors are perfectly balanced, and the rice powder is a simple addition that makes a nice difference in texture. When it's just my family, I tend to add more spice, but I've made it for guests of all ages with the recommended tsp. and it's still satisfying.
