If you don't have time to make the recipe, make a half recipe using 1 can of chick peas & a 12 oz. bag of baby spinach.

If you are not in a hurry, the cumin & coriander will taste better if you allow them to 'bloom' in the olive oil before assembling the dressing.  White vinegar is fine but I prefer sherry vinegar.  When ricotta salata isn't available I substitute goat cheese.
