Wow, this is a very easy recipe to make, and what an outcome!!! I had never cooked with chestnuts before, but fell in love with them on a recent trip to China. This was absolutely wonderful - and a little bit goes a long way - chestnuts are very rich. The store was (I don't know how) out of thyme, so I used marjoram with great results. I let it reduce for a bit too long, and it is easy to thin with a bit of broth. Fantastic flavor - I plan on sharing this at Thanksgiving with my family.

The salmon tasted great here, but I thought the slaw and dressing was really the outstanding player. I would use this alone for a fun and interesting salad anyday! As for the entire package, I also made an easy pineapple salsa with a bit of cilantro and shallot, sprinkled with some crumbled cojita, and it was simply delicious - everyone loved this! I'm making some yummy salads with the leftovers!!! (I made waaaay too much, as usual!) I might change up the seasoning a smidge next time, perhaps some sweet paprika in addition, or something a bit spicier - the coffee in the recipe was really good.
