These are time consuming, but delicious.  I made heart-shaped cookies, so you could use any cookie cutter you wanted.  I liked the caramel filling, but I think it needed a good dose of salt.  I would also try giving it an additional flavor; possibly some raspberry puree stirred in?  At first I didn't like the cookies, but after a day, they became chewy, almost brownie-
like, and near addictive.

My cheesecakes were flatter than the picture, but good, and easy to make.  I used sour cream instead of fromage blanc, and 12 Oreos for the wafer cookies.  Didn't care for the raspberry topping.  Would make again, experimenting with different flavor combinations.

This is nice when you want to use ingredients you already have on hand.  I accidently overbaked these and they were still good.

I skipped the basil and the sesame seeds.  Easy, tasty, and looks great with the egg wash.
