The best...eggplant recipe...ever. I would advise against adding the extra oil to the sauce, it is completely unnecessary. I've made this numerous times and it has blown away gourmet and gourmand friends alike. So simple, yet so delightful. Also, don't worry about finding ricotta salata, manchego or that "drunken goat" Spanish cheese work equally well. This dish is also quite a value, it can cost less than $5 and serve 6 or more people. It is great with pasta and slathered on Italian bread.
