A big hit at our table.  I didn't have fresh ricotta but added approx. 25% heavy cream to the packaged ricotta to make it creamier and give it a little freshness.

I think the apricots would be more manageable if they were halved or quartered. Overall it was a wonderful dish enjoyed by all.
