Baked Eggs with Chorizo and Potatoes

This was a really great breakfast dish.  I agree about the potatoes making it take longer, so I just nuked them instead of boiling them!

Lasagna-Style Baked Pennette with Meat Sauce

I just made this and we loved it! It took a little while to make, but it was very good and very filling.  Make sure you have enough people because it makes a lot!
