How yummy!  I made this for dinner, used bok choy instead of the collards since we don't get them here in Central America.  But a very good dish indeed!  The butternut is slightly sweet and savory while the bit of bacon gives it a smokey rich flavor.  The freshness of the corn and everything else is very good.  Nice dinner soup served with a crusty bread.  The family loved it.
