I had to use sundried tomatoes in oil because it's all I could find.  Amazing flavors in this sandwich.  Might be a too tangy because of the sundrieds I had to use.

I used smoked paprika with this dish and it was a nice subtle blend of smoky and sweet.  I also used the best tomato I could find.  Will definitely make again.

These are really simple and very good!  I saved some of the filling and used it later in a delicious omelette.
