The first time I made this dish, I used almost 2 lbs of tomatos by mistake and only had a couple of chicken thighs on hand, so I used skinless breasts too. The recipe came out perfectly. I have made it several times since with breasts only and it is always a winner.

I used fresh orange juice from a local natural food store along with 3 blood oranges I juiced to amp up the color. I doubled the recipe for a party and it was a BIG hit!

I'm new to cooking with olives and wanted to try an easy recipe. This was very impressive and tasted like it took far more effort than the 20min I spent. Even my fiance who doesn't like dill OR olives ate it up!
