This is a good recipe, my family loves it. However, the cooking times seem a bit off.. if you heat oil to smoking, as it says, and then throw in minced garlic, it's going to brown almost instantly, not in 45 seconds like the recipe says! so just keep an eye on things.

A classic. This soup is a staple at our holiday tables and has been for years. Friends have made it part of theirs as well. Easy and extremely tasty. Even people who think they don't like squash love this soup.
