I have made this many, many times, especially for big Superbowl parties.  People love it.  What's amazing is no one can figure out what the meat is (I make it with chicken thighs).  I also use ancho chili powder instead of mexican runof the mill CP.  Great with Mexican Crema stirred in- yummmmm!

I chose to make this because I already had some fresh ricotta in the fridge that I wanted to use up.  When I started to put it together, I was afraid it was going to be dry and ICk- It was the opposite!!  This is a WONDERFUL baked pasta, my husband thinks it is incredible.  It is actually juicy, moist and delicious.  Next time I will make it with the article's fresh ricotta recipe- I'm sure it will be 6 stars, then!

Made these for dinner last night- they were yummy and they were FAST!!!!  A great change from a plain cheeseburger, I used preshredded coleslaw mix, instead of shredding it myself, to save time.  This definately reminded me of a brisket sandwich, and we all enjoyed it.
